Standard (non-booted): Many people prefer a non-booted cable assembly over a booted assembly. A non-booted assembly takes up less room in a high density environment and is easier to plug in and out.
Booted: The booted (molded boot) cable gives the assembly additional strain relief. It also makes it easier to remove the cable from a bundle due to its snag-free tab.
